| Process Notes | Ripe red cherries handpicked and floaters removed. Semi-washed using only 60% of the water used in a full wash. After washing, coffee is heaped and rested overnight, then dried on raised beds under shade with regular hand-raking. Removed at 10.5% moisture and bagged in food-grade bags. |
