Process Notes Ripe cherries are selectively hand picked, floated to separate low density cherries. Cherries are then pulped about 25%. Pulped coffee is dried under shade in polyhouse for 7 days, then sun dried for 5 days. Covered between 12noon and 3pm to avoid the peak sunlight period every day
