Process Notes Ripe cherries are selectively handpicked and floated to remove low-density fruit. Whole cherries undergo anaerobic fermentation for 3 days, then shade-dried for 3 days before moving to raised beds in the sun for 10 days. Covered daily between noon and 3:30pm during peak heat.
