| Process Notes | Ripe cherries are selectively handpicked and floated to remove low-density fruit. Cherries undergo anaerobic fermentation for 3 days until pH drops just below 4. Fermented cherries are then pulped with all mucilage retained, and shade-dried for 29 days. |
